1/3 cup diced red onion
1/2 cup canned chickpeas, drained and rinsed
1/2 cup diced tomatoes
1/2 cup sliced pepperoni
1/4 cup diced jarred roasted red peppers
1/2 cup diced fresh mozzarella
1/4 cup shredded Parmesan cheese
3 tablespoons red wine vinegar
1/4 cup olive oil
1/2 teaspoon salt
1/4 teaspoon fresh-ground black pepper
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 cup grated Parmesan cheese for the dressing


In a large glass or stainless-steel bowl, combine the romaine blend salad mix, diced red onion, drained and rinsed chickpeas, diced tomatoes, sliced pepperoni, diced jarred roasted red peppers, diced fresh mozzarella, and shredded Parmesan cheese.
In a small bowl, create the dressing by whisking together the red wine vinegar, olive oil, salt, dried oregano, dried basil, black pepper, and grated Parmesan cheese.
When ready to serve, drizzle the dressing over the prepared salad in the large bowl.
Toss the salad thoroughly, ensuring the dressing coats all the ingredients evenly. Serve immediately.
