Cajun Red Beans & Rice

An authentic Cajun Red Beans & Rice dish featuring smoked sausage, tender beans, and the holy trinity of onions, peppers, and celery, elevated by a smoky ham hock.

2 tablespoons oil
1/2 pound beef smoked sausage, diced
1 cup onion, diced
1/2 cup celery, diced
1/2 cup green pepper, diced
4 cloves garlic, minced
4 cups chicken stock
2 (19 ounce) cans red beans, rinsed and drained
1 ham hock
1 teaspoon paprika
1 teaspoon dried oregano
1 teaspoon dried thyme
2 bay leaves
Salt and pepper to taste
4 cups cooked rice


Heat 2 tablespoons of oil in a large saucepan over medium heat.
Add diced smoked sausage to the pan and sauté until lightly golden brown, about 5-7 minutes. Once done, set the sausage aside.
In the same pan, add the diced onions, celery, and green pepper, cooking until tender, which should take about 7-10 minutes.
Add the minced garlic into the pan and cook until fragrant, roughly 1-2 minutes.
Pour in the 4 cups of chicken stock to the pan.
Stir in the rinsed and drained red beans, ham hock, paprika, oregano, thyme, bay leaves, and season with salt and pepper.
Bring the mixture to a boil, then reduce the heat to medium-low.
Cover the saucepan and let it simmer for 1-3 hours, ensuring the ham hock becomes tender and the meat falls off the bone easily.
Once cooked, remove the ham hock from the pot, pull off the meat, chop it into bite-sized pieces, and add it back to the saucepan.
Stir the precooked rice into the saucepan, mixing thoroughly to combine with the bean and ham hock mixture.
Serve the Cajun Red Beans & Rice hot as a main dish or a hearty side.


To make ahead as a freezer meal, freeze the rice and red bean/ham hock mixture separately and warm up to combine when ready to serve.
Alternatively, you can prepare fresh rice when you’re ready to serve instead of freezing it.
