Thanksgiving is almost here and I am excited for my favorite holiday, simply because I can express my love through food. This year is especially special because over the past several months, we have had time as a family to reflect on what is truly important to us. This Thanksgiving, I’ll be preparing some of our favorites to drop off & share with others.
I plan on making standard Thanksgiving items, with mashed potatoes as one of them. To free up some space in the kitchen, I’ll be leaning on my crockpot to help make these crockpot mashed potatoes. It really doesn’t get any easier! You can also prepare this in advance and make ahead – the potatoes can be cooked the day before serving. When ready to serve, reheat on the stove and continue with steps 4 through 6.
Crockpot Mashed Potatoes
Prep Time: 10 min
Cook Time 3-7 hours
Serves: 10-12
INGREDIENTS
5 pounds russet potatoes, cleaned and cut into cubes
3 cups chicken broth
1 teaspoon salt
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon black pepper
1 package (8 oz) cream cheese, room temperature
1 stick (½ cup) unsalted butter
½ cup half-and-half or milk
Serving Options
Butter
Chives
Parsley
Shredded cheese
Bacon bits
INSTRUCTIONS
1. Clean and cut potatoes, add to crockpot
2. Pour chicken broth over potatoes. Cook on low for 6-7 hours or high for 3-4 hours, or until potatoes are fork tender. Remove from crockpot and drain, reserve chicken broth
3. Return drained potatoes to pot and mash with a potato masher. Add seasonings, cream cheese and butter
4. Mix until completely combined
5. Gradually add half-and-half and stir until desired consistency, add back in reserved chicken broth as needed
6. Serve immediately. Store leftovers in refrigerator
