Cheese SpƤtzle

Cheese SpƤtzle is a comforting German dish similar to macaroni and cheese. Homemade spƤtzle are layered with cheese and onions, then baked to perfection.

250g all-purpose flour
3 large eggs
60ml water
1 teaspoon salt
200g Emmentaler cheese, grated
1 large onion, sliced
2 tablespoons butter
Salt and pepper to taste
Fresh parsley, chopped for garnish


In a large bowl, mix together flour, eggs, water, and 1 teaspoon of salt to form a smooth, thick batter.
Let the batter rest for 15 minutes at room temperature.
Bring a large pot of salted water to a boil. Using a spƤtzle maker or a colander with large holes, press the batter through the holes directly into the boiling water.
Boil the spƤtzle for 2 to 3 minutes or until they float to the surface, then remove them with a slotted spoon and drain well.
In a skillet over medium heat, melt 1 tablespoon of butter and sautƩ the sliced onions until caramelized. Set aside.
Preheat the oven to 180Ā°C (350Ā°F).
In a large baking dish, layer half of the spƤtzle, followed by half of the caramelized onions and half of the grated Emmentaler cheese. Season with salt and pepper.
Repeat the layering with the remaining spƤtzle, caramelized onions, and cheese.
Dot the top with the remaining butter and bake for 15 to 20 minutes, or until the cheese is melted and bubbly.
Garnish with freshly chopped parsley before serving.


Use other cheeses like GruyĆØre if Emmentaler is not available.
For a crispier top, broil for the last 2-3 minutes of baking.
