Ingredients

  • Cornmeal – 1 cup (240 ml)

  • All-purpose flour – 1 cup (240 ml)

  • Baking powder – 2 tsp (10 ml)

  • Sugar – 2 tbsp (30 ml)
  • Salt – 1 tsp (5 ml)
  • Milk – 1 cup (240 ml)

  • Eggs – 2 large

  • Butter (melted) – 1/2 cup (120 ml
  • Jalapeños (chopped) – 2
  • Cheddar cheese (grated) – 1 cup (240 ml)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cornmeal, flour, baking powder, sugar, and salt.
  3. In a separate bowl, whisk milk, eggs, and melted butter.
  4. Gradually mix wet ingredients with the dry ones.
  5. Fold in jalapeños and cheese.
  6. Pour the batter into a greased baking dish.
  7. Bake for 25 minutes or until a toothpick comes out clean.
  8. Let it cool slightly before serving.
