Pad Si Ew

A flavorfully sweet and savory noodles dish loaded with vegetables, protein, and the perfect thin rice noodles for Pad Si Ew.

Ingredients

1 onion, sliced
34 cloves garlic, minced
4 tablespoons oil
1 lb sliced chicken, pork or beef (your choice)
4 tablespoons black soy sauce
4 tablespoons regular or lite soy sauce
23 tablespoons granulated sugar
1/2 package wide rice sticks (pho noodles)
2 cups frozen broccoli

Instructions

To pre-prepare the rice sticks, bring a pot of water to a boil, turn off heat, and add in the dried rice sticks. Let sit for 5-7 minutes until softened, and drain.
In a large wok, heat oil and add onions and garlic.
Once onions are softened, add the meat of choice and sauté for 3-5 minutes.
After 3-5 minutes, add soy sauces and sugar, and stir and reduce until the sauce is slightly thick (about 5-7 minutes).
Add the broccoli and toss to heat through.
When the broccoli is heated through, add the drained rice stick and toss gently.
To serve, plate the noodles and garnish with fresh bean sprouts, crushed peanuts, and/or sliced green onions.

Notes

To make it gluten free use gluten-free noodles instead of regular rice noodles or use zucchini noodles to make it low carb.
