Cuban Chicken Soup

A hearty and flavorful Cuban chicken soup made with tomatoes, onions, garlic, oregano, cumin, bay leaf, and potatoes.

2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 teaspoon dried oregano
1 teaspoon ground cumin
1 teaspoon ground coriander
2 bay leaves
2 cups chicken broth
1 (14.5-ounce) can diced tomatoes
1 large potato, peeled and diced
2 cups shredded cooked chicken
Salt and freshly ground black pepper, to taste
2 tablespoons chopped fresh parsley, for garnish


Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and garlic and cook, stirring, until softened, about 3 minutes.
Stir in tomato paste, oregano, cumin, coriander, and bay leaves and cook, stirring, for 1 minute.
Add chicken broth, diced tomatoes, and potato and bring to a boil. Reduce heat and simmer, stirring occasionally, until potato is tender, about 15 minutes.
Stir in chicken and season with salt and black pepper, to taste. Simmer for 10 minutes.
Garnish with parsley, if desired, and serve hot.


For a spicier soup, add more chili powder or red pepper flakes.
